Ingredients
  • 1 pork tenderloin, trimmed
  • 2tbsp Farm Boy Extra Virgin Olive Oil
  • 2tbsp Farm Boy Herbes de Provence Seasoning
  • .25tsp Farm Boy Fleur de Sel
  • 36 Farm Boy Pita Crackers or crostini
  • 1jar Farm Boy Cranberry, Port and Pecan Compote
  • 1cup blue or goat cheese, crumbled

Instructions
  1. Rub tenderloin with olive oil, herb seasoning and salt.
  2. Roast at 400°F for 20-25 minutes, until internal temperature reaches 160°F.
  3. Let rest until cooled, then slice thinly.
  4. Place pork slices on crackers, top with cranberry compote and garnish with cheese.
