Ingredients
  • 1 Trout fillet, cut into 2 pieces and trimmed
  • 1cup pecans
  • 1/2cup Bread Crumbs
  • 1/2cup flour, seasoned with salt
  • 1 egg, beaten
  • 1 peach, cut in half and seed removed
  • 2tbsp Farm Boy Honey
  • Arugula
  • Farm Boy Apple Cider Vinaigrette
  • 2tbsp butter, unsalted

Instructions
  1. In an oven-safe pan, glaze the peaches with honey and add 1 Tbsp melted butter. Bake at 350°F for 15 minutes.
  2. Combine the pecans and bread crumbs in a food processor and pulse.
  3. Dust trout with flour, dip into the egg, then coat with pecan mixture.
  4. In a hot pan with 4 Tbsp oil, add the trout skin side down and cook for 3 minutes until crispy. Flip over and add 1 Tbsp of butter to the pan. Cook for an additional 3 minutes.
  5. Toss arugula with vinaigrette, top with cooked peaches and trout, then sauce with the remaining juice from the cooked peaches!
