Pan-fried Trout with Papaya Mango Salsa

Instructions
For the Papaya Mango Salsa:
  1. In medium bowl, combine mango, papaya, pineapple, red onion, radish, Scotch bonnet pepper, cilantro, lime juice and 2 Tbsp Farm Boy Extra Virgin Olive Oil.
  2. Add salt to taste.
  3. Refrigerate until ready to use.
For the trout:
  1. Heat a large frying pan over medium high heat.
  2. Add 1 Tbsp Farm Boy Extra Virgin Olive Oil.
  3. Season trout with salt and pepper.
  4. Place trout, skin side down on frying pan and let skin crisp up for 3-4 minutes.
  5. Flip trout and cook for another minute, or until internal temperature reaches 158°F.
  6. Serve garnished with Papaya Mango Salsa and lime wedges.
