Orange Salad with Fennel and Olives

Instructions
  1. Using a sharp knife, cut tops and bottoms of oranges, then cut away the skin, making sure you remove the white pith. Slice oranges into ¼” rounds.
  2. Make dressing by combining orange juice with olive oil. Season with salt and pepper.
  3. On large platter, arrange oranges and fennel. Drizzle with dressing and garnish with reserved fronds.
  4. Sprinkle with a bit more salt and pepper and serve at room temperature.
