Ingredients
  • 400g Farm Boy™️ Mini Bocconcini, drained
  • 1cup Farm Boy™️ Extra Virgin Olive Oil
  • 4-6 garlic cloves, thinly sliced
  • 2sprigs each rosemary and thyme
  • 1tsp whole black peppercorns
  • 1-2 fresh bay leaves
  • 1pinch chili flakes
  • 1peel half a lemon, cut into thin strips
  • 1splash Farm Boy Red Wine Vinegar
  • Farm Boy Fleur de Sel to taste

Instructions
  1. Warm olive oil in medium sauce pan and add garlic.
  2. Sweat garlic over low heat just until fragrant.
  3. Remove from heat and cool for 5 minutes.
  4. Add rosemary, thyme, peppercorns, bay leaves, chili flakes, lemon peel, red wine vinegar and fleur de sel.
  5. Add bocconcini and place mixture in bowl or jar.
  6. Cover and refrigerate overnight.
  7. Bring to room temperature and serve with Farm Boy™️ Prosciutto and crusty bread.
