Instructions
  1. Place cooked lobster meat in medium bowl.
  2. Add mayonnaise, celery, chives and salt and pepper to taste.
  3. Mix to combine.
  4. Slice hoagie buns lengthwise through the top, without cutting all the way through.
  5. Melt butter in large frying pan and place buns, cut side down in skillet.
  6. Toast until bread is golden brown, turning bread as you go to brown on all sides.
  7. Mound lobster mixture into warm buns.
  8. Garnish with chopped chives and serve with lemon wedges and potato chips.
