  1. Cook pasta to al dente. Reserve 1/3 cup pasta cooking water.
  2. While pasta is cooking, heat olive oil in large frying pan. Cook shallots and chili flakes until shallots are golden and fragrant.
  3. Add tomatoes and cook until they start to break down. Add white wine and cook until mostly evaporated. Add lobster and pasta along with pasta water.
  4. Continue to cook, tossing pasta in sauce, until it starts to thicken. Finish with whipping cream and cook at high temperature until sauce is thick. Add chopped parsley and adjust seasonings to taste.
  5. Serve, garnished with parsley and finish with a drizzle of Olive Oil.
