  1. Pre-heat oven to 375°F.
  2. Slice squash in half, lengthwise. Scoop out the seeds. Brush with 1 tbsp of Farm Boy™ Olive Oil, season with salt and pepper. Roast on a baking pan, cut side down, for 30-45 minutes, or until a fork punctures the flesh of the squash easily.
  3. While squash is roasting, combine the ricotta, mozzarella, and fresh basil in a bowl, set aside.
  4. Remove the sausage casings and brown the sausage in large skillet over medium heat, using a spoon to break up the pieces. Once cooked through, remove from pan, drain and set aside.
  5. Add sauce to the pan and bring to a simmer. Add the sausage to the sauce and heat through.
  6. Remove squash from the oven and allow it to cool enough to handle it, about 5 minutes. Scrape the flesh from the squash with a fork and add to the sauce.
  7. Assemble the Lasagna. Start with a scoop of sauce, followed by a layer of the cheese mixture. Repeat the layers until you’ve filled the squash, ending with a layer of sauce and then topping with mozzarella.
  8. Turn the oven to broil and put the filled squash in the oven just until browned. Enjoy!
