After a dinner of corned beef brisket and mashed potatoes, what better way to use your leftovers than making a hearty irish breakfast?
Ingredients
- 2-3Tbsp Butter
- 1clove Garlic
- 1/2 leekthinly sliced
- 1cup white cabbagethinly sliced
- 2cups mashed potatoes
- 1/4cup Whipping Cream
- salt and pepperto taste

Instructions
- In frying pan, melt butter and cook garlic and leeks for 2-3 minutes, until softened. Add cabbage and saute until wilted, 2-3 minutes. Add mashed potatoes, cream and salt and pepper to taste.
- Cook until everything is warmed up and potatoes are starting to brown.
- Serve with cooked sausage, corned beef and poached eggs!
