Hearty Sausage, Butternut Squash and Kale Soup

Try this simple recipe idea with our Artisan Oktoberfest Sausages and fresh harvest Butternut Squash.
Instructions
  1. Heat oil in a non stick pan over medium high heat. Remove sausages from casings and add to pan. Cook for 3- 5 minutes breaking the sausages into smaller pieces with a wooden spoon as they cook. Add onions and garlic and sauté until onion becomes translucent.
  2. Drain fat from the pan and transfer sausage onion mixture to the slow cooker. Add butternut squash, chicken stock, fresh thyme sprigs, bay leaf and hot pepper flakes. Cover and cook on high for 3 hours.
  3. Add orzo to slow cooker after 2 ½ hours of cooking.
  4. Add kale 5 minutes before the end of cooking.
  5. Season with salt and pepper to taste.
  6. Ladle into bowls and garnish with chopped fresh sage and parmesan cheese.
