This is an easy (and different) way to use up leftover ham - particularly because you only use one pot. It is also a great way to get my kids to eat broccoli! . Combine this meal with a Farm Boy Caesar Salad and crusty bread from the Farm Boy Bakery and a Farm Boy Honeycrisp Apple Pie for dessert and you have a very easy, but hardy meal. Instructions
  1. Cook fettuccine in a dutch oven according to package directions. Drain and set aside.
  2. In the same pan, melt margarine. Add broccoli, mushrooms, and garlic; cook over medium heat, stirring occasionally, until broccoli is crispy tender (4-5 minutes).
  3. Stir in parsley, cream and pepper. Continue cooking, stirring occasionally, until heated through (4 to 5 minutes). Stir in fettuccine, 3/4 cup Parmesan cheese and ham.
  4. Continue cooking, stirring occasionally, until heated through and cheese is melted (4-6 minutes).
  5. Serve with additional Parmesan cheese.
