Instructions
  1. Preheat oven to 450°F.
  2. Make a rub with the garlic, rosemary and olive oil. Rub all over pork and season generously with salt and pepper.
  3. Place pork on roasting rack and bake for 15 minutes at 450°F. Reduce temperature to 325°F and roast for 1 hour, or until internal temperature reaches 160°F.
  4. Transfer pork to platter and let rest for 5-10 minutes.
  5. Cut into chops and serve with peach, bourbon & black tea compote.
