Ingredients
  • 1cup Farm Boy Wild Rice Blend
  • 2cups chicken stock
  • 1/2tsp Salt
  • 3Tbsp Farm Boy™️ Extra Virgin Olive Oil
  • 1cup diced onion
  • 1cup diced celery
  • 1cup shredded carrot
  • 1 garlic clove, minced
  • 1/3cup Chopped pecans
  • 1/3cup chopped parsley
  • 1Tbsp chopped sage
  • 3/4cup pomegranate arils, plus more for garnish
  • salt and pepper, to taste

Instructions
  1. In medium saucepan place wild rice blend, chicken stock and salt.
  2. Bring to a boil and then simmer, covered, until all liquid is absorbed.
  3. Meanwhile, in large frying pan, heat olive oil and cook onion, celery, carrot and garlic until golden brown.
  4. Mix in pecans, parsley and sage.
  5. Add cooked rice and ½ cup pomegranate arils.
  6. Season to taste with salt and pepper and serve garnished with additional pomegranate arils.
