Instructions
  1. Cut Acorn squash ( you can also use Pepper Squash) in half, remove seeds, microwave for 12 minutes.
  2. Mix the rest of the ingredients in a pot, but save 1 can of corn for later.
  3. Heat low-medium heat, approximately 8 minutes.
  4. Scoop cooked squash into pot
  5. Blend with an immersion (or regular) blender until smooth.
  6. Add second can of corn and cook for 5 minutes at low-medium heat. Enjoy!
