Instructions
  1. Heat oil in a large non-stick frying pan. Once hot add the onions and saute until fragrant.
  2. Add the garlic, brussels sprouts and butter.
  3. Cook until the sprouts are tender and beginning to caramelize.
  4. Add the bay leaf and thyme.
  5. While the sprouts are cooking, combine the cream and blue cheese in a small sauce pan and gently heat until the cheese melts into the cream.
  6. Slowly add in the blue cheese/cream mixture, stirring to fully incorporate and then simmer until the sauce thickens.
  7. Stir in the Farm Boy™ Apple Cider Vinegar and season with salt and pepper, if needed. Remove the bay leaf and thyme sprigs.
  8. Sprinkle bacon over the sprouts and serve immediately.
