Instructions
  1. Place couscous in medium bowl and mix in turmeric, salt and 1 Tbsp olive oil.
  2. Add boiling water, stir well and cover. Let sit for 5 minutes, then fluff with a whisk. Reserve.
  3. Bake Merguez sausages on parchment-covered tray at 375°F for 10-12 minutes, until internal temperature is 160°F. Cut cooked sausages into 1” pieces.
  4. In large frying pan, heat the remaining 2 Tbsp olive oil and cook onions and peppers until soft.
  5. Add garlic and cook another minute.
  6. Add tomatoes, tomato paste and salt and pepper to taste and cook 5 minutes.
  7. Add shrimp and cooked sausages and cook 5 minutes.
