Instructions
  1. Blend or whisk coconut milk, cream, eggs, and sugar until incorporated.
  2. Dice croissants into 1” cubes, add to large bowl.
  3. Pour coconut milk mixture over croissants and mix with chocolate chips. Let sit for 1 hour.
  4. Preheat oven to 350°F and grease 8 ramekins with coconut oil.
  5. Add the pudding, leaving 1/2" of room at the top. Bake for 1 hour, covered in tin foil. Uncover and bake a further 15 minutes, until temp reaches 160°F.
  6. Enjoy with whipped cream and toasted coconut to garnish!
