Classic Mexican Shrimp Cocktail

Directions

  1. Cook shrimp in boiling salted water for 3-4 minutes, until internal temperature reaches 158°F.
  2. Drain and chill completely.
  3. In medium bowl, combine pico de gallo, ketchup, olive oil and lime juice.
  4. Season to taste with salt.
  5. Add avocado, cilantro and chilled shrimp.
  6. Toss gently and serve with tortilla chips.

  • 1/3 cup ketchup

  • juice of 1/2 lime
  • salt to taste
  • 1 large ripe avocado peeled and diced
  • 2 Tbsp fresh cilantro chopped
  • Farm Boy™ Natural Tortilla Chips
