Sweet mini peppers stuffed with chorizo sausage, cheese and grilled until golden brown. This recipe comes from Leanne McDougall of Gatineau.

  1. Cut the top cap off the peppers and set aside. Using a small spoon, scoop out the inside seeds from the pepper.
  2. Remove sausage meat from casings and brown in frying pan. Allow to cool and chop finely. Place in a bowl with cheeses and blend to a smooth paste. Add paprika.
  3. Using a small spoon, fill peppers until stuffed to the top. Replace the reserved top and stick a small bamboo skewer in to hold together. Refrigerate until ready to use.
  4. Barbeque over medium-high until the peppers start to blister and the filling starts to bubble, around 8-10 minutes. Serve with fresh Farm Boy Salsa or Pico de Gallo.
