- 1.1kg yukon gold potatoes
- 2tbsp Farm Boy™ Portuguese Extra Virgin Olive Oil
- 1/2tsp Saltor to taste
- 1/4tsp cracked black pepper
- 1/4cup Farm Boy™ Small Batch Cheddar Cheesegrated
- 1/2tsp Farm Boy™ Truffle Oilor to taste
- 1tbsp chopped parsley
- 1tbsp Farm Boy™ Vegan Mayonnaise Type Dressingfor serving

Recipe Notes
1. Cut potatoes into ¼” sticks and then rinse and drain thoroughly.
2. In medium bowl, toss potatoes with olive oil and season with salt and pepper.
3. Bake at 450°F for 15 minutes, then toss and bake for another 10-15 minutes, until golden and crisp.
4. Remove from oven and toss with cheese, truffle oil and parsley.
5. Serve with mayonnaise.
