Castello Blue Cheese Orzo Risotto

Instructions
  1. Place olive oil, thinly chopped shallots and garlic in large saucepan.
  2. Fry until golden brown.
  3. Add Shiitake mushrooms and orzo pasta and cook for another few minutes before adding chicken stock.
  4. Gradually start adding chicken stock, a ladleful at a time, while stirring continuously until stock evaporates.
  5. When orzo pasta is almost al dente, add green peas and broccoli.
  6. Remove from stove when orzo is al dente.
  7. Add blue cheese and enough whipping cream to make mixture creamy.
  8. Add salt and pepper to taste.
  9. You can also add any seasonal vegetables such as sweet corn, etc.
