  1. In large frying pan, cook bacon until it renders most of its fat and is starting to get crispy. Add mushrooms and cook until mushrooms release all their juices and start to brown. Remove bacon mushroom mixture from pan and reserve.
  2. Season pork chops with salt and pepper. Heat canola oil in same frying pan and cook pork chops over medium high heat, 4-5 minutes per side.
  3. Add bacon mushroom mixture and white wine. Cook over high heat, until wine is reduced and coats the back of a spoon. Cook until pork chops reach an internal temperature of 160°F.
  4. Serve pork chops with mushrooms and bacon and garnish with Bleu d’Elizabeth.
