A tasty fruit pork tenderloin with roasted onions and crispy prosciutto! This recipe comes from Stephanie Atwood of Oshawa.

  1. Mix the vinegar with the jam in a large bowl.
  2. Poke some holes in the pork tenderloin and then place into the bowl with the jam mixture.
  3. Cover and refrigerate 8-12 hours.
  4. Remove from fridge and preheat the oven to 350°F.
  5. Place on a large baking dish.
  6. Lay the prosciutto out on a flat surface.
  7. Remove the pork from marinade - discard marinade.
  8. Lay the pork on top of the prosciutto and wrap the prosciutto around the pork tenderloin.
  9. Place the prosciutto wrapped pork on top of the onions and bake, uncovered for 45 min to an hour or until the temperature reaches at least 145°F.
  10. Remove from the oven, slice and serve with onions.
