BBQ Portobello Mushroom Fajitas

  1. In two separate skillets, heat 2 Tbsp extra virgin olive oil in each over medium heat.
  2. In first skillet add minced garlic, stirring frequently for 1 minute or until fragrant. Add sliced onion, tossing in oil and garlic. Sauté until onion becomes slightly translucent. Add sliced peppers, cumin, salt and pepper and sauté together until peppers become soft. Season to taste with extra cumin, salt and pepper.
  3. In second skillet add thoroughly dried Portobello strips, tossing in oil. It is important to let the Portobello strips cook until they release their juice and shrink, then add Chipotle BBQ Sauce. Let simmer in sauce for 5 - 7 minutes.
  4. Remove both from heat. Pile in warmed tortillas and top with fresh cilantro, lime juice and guacamole!
