  1. Remove skin from salmon fillet and trim as necessary, cut into four 3-inch x 3-inch pavés (squares). Season parchment lined baking sheet with Farm Boy™ Fleur De Sel and ground Farm Boy™ Organic Black Peppercorns.
  2. Place salmon on parchment and sprinkle Farm Boy™ Fleur De Sel on top. Place in oven at 275° F for 8-10 minutes, until salmon becomes opaque and internal temperature reaches 158° F
  3. Toss fresh grape tomatoes with olive oil, season and roast at 450° F for 5 minutes. Blanch fresh asparagus in boiling salted water for 30 seconds and refresh in an ice bath. Toss tomatoes and asparagus with 2 tbsp Farm Boy™ Lemon Garlic Dressing.
  4. For the avocado mousse: Place the whipping cream into a mixing bowl. Whisk just until the cream reaches stiff peaks. Separately, mash one fresh ripe avocado with the juice of ½ fresh lemon. Fold the whipped cream into mashed avocado, season with Farm Boy™ Fleur De Sel, ground Farm Boy™ Organic Black Peppercorns and 1 tbsp chopped chives.
  5. Arrange vegetables loosely on plate or serving platter, place salmon on top. Add a dollop of Avocado mousse on top of the salmon and garnish with fresh chopped chives.
