Apple Cider Lamb Sirloin Chops with Pumpkin

A new, cider-y twist on an old fall favourite recipe! This recipe comes from Mike Gafan of ottawa.
Instructions
  1. Pre-heat oven to 400°F
  2. Spread the pumpkin or butternut squash wedges, onion, potatoes and garlic into a large roasting pan.
  3. Drizzle with the olive oil, sprinkle over the chili flakes and toss together until the vegetables are coated in oil.
  4. Add the lamb chops to the vegetables, toss with sweet apple cider and sprinkle with rosemary.
  5. Transfer to oven and bake for 35-45 minutes or until internal temperature of the lamb reaches 145°F
  6. Turn the chops half way through cooking.
