Lunchbox, Unpacked: Gyoza, Edamame, and Blue Plums

Welcome to our Lunchbox, Unpacked series! We’re tossing out the tired PB&J and getting creative with balanced, totally delicious lunch options for you and even your little ones.

At Farm Boy HQ, we are avid lunch-packers. Of course some days are pizza days, and some days we can barely catch the bus with our shirt on right-side-out… so packed lunch is definitely out of the question (been there), but food is the name of our game, and we know that eating better starts with cooking at home. That includes what you bring along with you for the day.

With a little prep and our help, we’re confident you can throw together a mid-day nosh that’ll fuel your brain, your body, and keep you going until dinnertime.

We’re exploring the products on our shelves to find the ones your coworkers will be craning their necks to have a peek at and offering “swapsies.”  No thanks, I’ll stick to my own.


Our Lunchbox, this week:

A thermos doesn’t have to mean soup! With this revelation, we urge you to go forward and fill your heat-preserving containers with anything that needs to stay warm. Today? Dumplings. Those little, crimped gyoza found all over Asia, and (lucky for us) in Farm Boy stores. Ours are filled with ground Canadian pork, onions, garlic and chili peppers.

Quickly steam or boil these guys (takes about 8 minutes) in the morning, pop them into the flask, and get excited for 12 o’clock.

We’ve paired ours with:

– Farm Boy Thai Chili dipping sauce

– A scoop of protein-packed edamame  (we sell in-pod or out, take your pick!) + a lime wedge

– Probiotic-rich Farm Boy Organic Kim Chi to add a little spice!

On the side?

– An Ontario blue plum or two (juicy, sweet-tart, locally-grown, and in season and stores right now!)

– We’d also pack a green or mint tea bag to make once we were at work. The perfect way to warm up and – bonus – it helps with digestion!

Adaptations

If you are adapting this for a child’s school lunch, you could swap the kim chi for sliced cucumbers for those who are spicy-averse. Also, switch out the tea for a bottle of water, maybe spiked with Pineapple-Mango Juice for a little extra flavour, without much sugar.

For dietary issues and allergies, this meal is free of nuts and dairy. Those who can’t eat gluten, we’d recommend subbing out a cooked chicken kebab, which works equally well with our dipping sauce. And for the vegetarian/vegan crowd? Veggie dumplings would be an easy swap, or try our Chickenless Nuggets tossed in Thai Chili Sauce! Yum.
