Lunchbox, Unpacked: “Bagel and Lox” Box

Welcome to our Lunchbox, Unpacked series! We’re tossing out the tired PB&J and getting creative with balanced, totally delicious lunch options for you and even your little ones.

At Farm Boy HQ, we are avid lunch-packers. Of course some days are pizza days, and some days we can barely catch the bus with our shirt on right-side-out… so packed lunch is definitely out of the question (been there), but food is the name of our game, and we know that eating better starts with cooking at home. That includes what you bring along with you for the day.

With a little prep and our help, we’re confident you can throw together a mid-day nosh that’ll fuel your brain, your body, and keep you going until dinnertime.

We’re exploring the products on our shelves to find the ones your coworkers will be craning their necks to have a peek at and offering “swapsies.”  No thanks, I’ll stick to my own.


Our Lunchbox, this week:

This week we’re trying out a play on a New York deli classic, bagel and lox.

  • Crispy, sturdy Farm Boy Whole Wheat Flatbreads act as our “bagel” component, complete with a sesame seed topping, to make it easy to construct perfect bites.
  • Our garlicky, Spinach and Artichoke Cream Cheese Dip offers protein and creaminess, and pairs beautifully with salmon!
  • Our blushing Cold Smoked Atlantic Smoked is the star of the show. Made in Prince Edward Island, full of heart-healthy omegas, and smoked to a melt-in-your-mouth cure. Tear into bite-sized pieces while packing, to save you from getting fishy hands at work.
  • Mini cucumbers are turned into a fresh, delicious, and very rudimentary “salad” with a little salt and lemon. Slice as thick or thin as you like.
  • A couple of sweet clementines (any citrus will do!) add fruity brightness and are a natural refresher!
  • A little treat on the side. It’s November, after all, the greyest month. You deserve this deep dark chocolate bar oozing with caramel and fleur de sel. You do.

Adaptations

There are so many potential adaptations here! You can swap out the smoked salmon for leftover cooked salmon or even tinned salmon here. If you don’t eat fish, deli ham works well (we love the Hardwood Smoked Ham carried at our deli counter) and if you’re vegan or vegetarian, have you tried making carrot lox?! This recipe looks incredible. No dairy? Try our vegan Cashew Cheeses instead of the dip. No gluten or sesame? Switch out the crackers for a gluten free or sesame-free option (something like our Double Baked Pita Chips  are nut and seed free.) Don’t like dark chocolate? That little bar comes in milk as well. Remember! This is just inspiration.
