The flavours of a traditional Christmas meal are just too good to enjoy for one day only! Whether leftovers are the goal going into dinner prep, or simply a happy accident, there are many delicious ways to use up your Christmas leftovers.

Here are a few – they may just inspire you to overprepare every year!

1. Brie, Turkey & Cranberry Melts

Leftover Farm Boy™ Cranberry Sauce

Leftover Farm Boy™ Turkey Gravy

  1. Layer turkey, brie, cranberry apple sausage stuffing and cranberry sauce onto buttered crusty bread.
  2. Press in a sandwich press or toast in a pan (like a grilled cheese), flipping half way, until cheese is melted and bread is golden brown.
  3. Serve with turkey gravy.

2. Homemade Turkey Soup

Makes about 2 litres of stock & 3-4 litres of soup

Leftover turkey carcass

6 large carrots, peeled and sliced, 4 for stock and 2 for soup

6 stalks of celery, 4 for stock and 2 for soup

2 white onions, quartered

2 bay leaves

1 tsp whole black peppercorns

Water to cover turkey carcass

8 sprigs parsley,4 for stock and 4 for soup (chopped)

½ cup barley

2-3 cups Leftover Farm Boy™ Fresh Local Turkey, diced

Salt to taste

2 cups dry egg noodles

Farm Boy™ Brioche Pull-Apart Rolls

  1. In large stock pot, place turkey carcass with onions, carrots, celery, bay leaves, peppercorns, parsley, and enough water to cover.
  2. Bring to a boil over medium high heat. Simmer for 2-3 hours. Strain and discard all veggies and bones.
  3. In stock pot place stock, carrots, celery and barley, and simmer until vegetables are tender and barley is cooked, about 30 minutes.
  4. Add diced leftover turkey, egg noodles and salt to taste.
  5. Simmer until noodles are tender. Add parsley.
  6. Serve with Farm Boy™ Brioche Pull Apart Rolls.

3. Stuffing Breakfast Cups

Leftover Farm Boy™ Cranberry Apple Sausage Stuffing

Leftover deli meat from your holiday charcuterie boards (like Farm Boy™ Spanish Tapas Trios or Italian Deli Meats)

Farm Boy™ Large White Eggs

Farm Boy™ Organic Marble Cheddar Cheese

Salt and Pepper to taste

  1. Spoon stuffing into greased muffin tins and press to the shape of the pan to form a cup.
  2. Add a slice of leftover deli meat.
  3. Crack in eggs, and sprinkle with salt, pepper, and shredded cheese.
  4. Bake at 375°F for 8-10 minutes.
  5. Bonus: Serve with Farm Boy™ Pork Breakfast Sausages and fresh fruit for a complete meal!

4. Mashed Potato Cakes

2 cups of leftover Farm Boy™ Chive Mashed Potatoes

1 Farm Boy™ Large White Egg

1/3 cup flour

½ cup shredded Farm Boy™ Organic Medium Cheddar Cheese

2 Tbsp sliced green onions

¼ cup vegetable oil

2 Tbsp chopped parsley

  1. Combine potatoes, egg, flour, cheese and green onions.
  2. Shape into patties.
  3. Heat oil in large skillet over medium high heat and fry patties, flipping until both sides are golden and crispy. Serve topped with parsley.

5. Ham & Cheese Pull-Aparts

Farm Boy™ Brioche Pull-Apart Rolls

Farm Boy™ Dijon Mayonnaise

Leftover sliced Farm Boy™ Smoked Bone-In Ham or Smoked Boneless Ontario Ham

Farm Boy™ Pure Ontario Honey

Sliced Farm Boy™ Farmstead Gruyere or Organic Medium Cheddar Cheese


Farm Boy™ Everything Bagel Seasoning

  1. Slice rolls horizontally and lay bottoms on a baking sheet.
  2. Spread rolls with Dijon mayonnaise and layer ham over buns.
  3. Drizzle honey over ham and top with cheese.
  4. Place bun tops over cheese, cut side down, brush with egg wash with and sprinkle with Farm Boy Everything Bagel Seasoning Blend.
  5. Bake at 350°F for 20-25 minutes, until cheese is melted, top is golden and internal temperature reaches 165°F.

6. Turkey & Stuffing Hash

2 Tbsp butter

2 cups leftover stuffing

1 cup diced leftover turkey meat

2-3 eggs

Leftover gravy and chopped parsley for garnish

  1. Melt butter in 9” skillet over medium high heat.
  2. Add turkey meat and cook for 2 minutes.
  3. Add stuffing and cook, stirring often, until bread start to crisp up, about 5 minutes.
  4. Break two or three eggs over stuffing and bring temperature down to medium low.
  5. Cover and cook until desired doneness for eggs, 5-8 minutes.
  6. Top with gravy and garnish with chopped parsley.
