Here's what you do |

Peel and cube tomatoes and cucumbers. Dice green pepper into 1/2 inch squares. Cut onions into 1/4 inch rings.
Mix the tomato juice, vinegar, oil, pepper (and a dash of tabasco, if you like) in a glass casserole with a lid. Add salt to taste - but remember that the tomato juice may contain salt.
Add the chopped vegetables, and chill overnight so flavours can blend.
Remove whole clove of garlic. You may leave the onion rings in or remove them before serving. |

Here's what you need |

2 cups peeled tomatoes
1/2 c green pepper
2 c cucumber, peeled
1/4 c sweet onion, cut in 1/4 inch rings
1 clove garlic (easier to fish out if you secure the clove with a toothpick) (or mince the clove)
4 tablespoons vinegar
1/2 c oil
1/4 c pepper
3 c tomato juice.
