Here's what you do |

In large frying pan, heat oil over medium high heat; fry onion, garlic, sale and pepper until onion is softened, about 3 minutes. Add chicken and jalapeno; cook until chicken is no longer pink, about 12 minutes. Add red pepper, black beans, and salsa and cook for 2 more minutes.
Spoon about 3/4 cup of the filling down the centre of each tortilla; sprinkle each with 1/4 cup cheese. Fold in bottom and top edges, then roll up. Place seam side down in a greased 13 x 9 baking dish. Sprinkle remaining cheese over top.
Bake 400 F oven until golden and hot and cheese is melted, about 15 minutes.
Serve with sour cream. |
