Here's what you do |

Coat white fish in olive oil, salt and pepper. Let sit in fridge for at least 30 minutes.
Dice Mango, Peppers, Chilies and finely chop Cilantro. Mix with about 2 tbsp of olive oil. Salt to taste. Allow flavours to mingle for at least 30 minutes.
Grill fish over pre-heated medium hight heat grill until light and flaky in the middle. Thin filets will only need a maximum of 3 minutes per side. |

1 yellow pepper
1 red pepper
1 orange pepper
2 small red chilies (or to taste)
1/2 bundle of cilantro
