| In a small bowl, mix together flour, herbs, salt and pepper. In batches, dip chicken slices in this mixture until thoroughly coated. Shake off excess flour. Heat Farm Boy Lemon Garlic Dressing in large saute pan over medium heat. Add chicken in batches and cook for approximately 3 minutes until lightly golden (but not cooked through). Remove from pan. Cover and keep warm. Repeat with remaining chicken slices.
In the same pan, heat extra virgin olive oil and butter. Add sliced mushrooms. Cook over medium low heat until mushrooms are softened. Add chicken broth, apple juice, maple syrup and balsamic vinegar to mushroom mixture. Heat to simmer and return chicken to pan. Cover and simmer for 5 minutes until chicken is almost cooked. Remove cover and cook until sauce is slightly thickened and lightly coats the chicken (another 2-3 minutes) and chicken is cooked through. Serves 5 people. |
