spacer Velvety Chocolate Pudding

A luxurious chocolate pudding that can stand alone or can be used as a pie filling or trifle layer.

This recipe comes from Kerry Landry of Ottawa.

spacer Here's what you do
spacer Whisk together sugar, cornstarch, cocoa, and salt in a medium saucepan.


In a 4 cup measure, combine cream, milk and vanilla.


Gradually add to dry ingredients while whisking until smooth.


Over medium heat, cook, whisking constantly, until mixture comes to a boil and thickens.


Add chopped chocolate and stir until all chocolate is melted.


Remove from heat, whisk in butter until melted.


Pour into dessert cups or layer with whipped cream and your favourite chocolate cake recipe for a most decadent chocolate trifle.


Garnish with whipped cream and grated Callibault chocolate.

3 Tablespoons cornstarch
1 1/2 Tablespoons cocoa powder
1 pinch of salt
1 1/4 cups 35% cream (whipping cream)
1 1/14 cups milk
1 teaspoon pure vanilla
6 ounces Callibault dark chocolate, finely chopped
1 1/2 Tablespoons unsalted butter, cut into small pieces
