Here's what you do |

In large bowl, combine chick peas, kidney beans, artichokes, onions, garlic and red pepper. Whisk together oil, vinegar, and salt and pepper. Pour over salad ingredients, tossing to coat well. Taste, and adjust seasoning as desired. Refrigerate, covered, until serving time. To serve, line salad bowl with lettuce leaves; add salad and garnish with chopped parsley. 8 servings. |

2 cups well-drained Unico chick peas
1 can Unico kidney beans
1 can Unico artichoke hearts, drained and cut in 1/2" chunks
2 onions, chopped
2 large garlic cloves, minced
1 red pepper, roasted, peeled and slivered
1/2 cup Farm Boy Extra Virgin Olive Oil
3 tbsp Unico Red Wine Vinegar
Salt and pepper
Lettuce leaves
Fresh parsley |
