Peel, core, and dice apple.
Dice onion.
Dice 1/2 red bell pepper.
With a sharp knife, score the top and bottom of the pork tenderloin 1/4 inch deep on 1 inch diagonals across the piece.
In a large skillet, sear over high heat, the pork tenderloin on all sides until dark golden brown.
Reduce heat to medium, add onion, pepper, and apple. Continue to cook for 3 minutes.
Add white wine (or apple juice), cover, reduce heat to med-low, and continue to cook 5 minutes.
Turn pork, and drizzle maple syrup over top of pork, recover and continue to cook 5-10 minutes or until pork is cooked through.
Remove pork and slice into 1/2 in medallions and arrange on a deep plate.
Return pan to high heat, boil and reduce pan sauce until thickened and caramelized.
Drizzel pan sauce over the pork.Serve. |
