spacer Pork and Mango Stir fry

This is a really yummy weekday meal. The flavors join together and taste delicious. It takes 10 minutes to prepare and just 10 minutes to cook.

spacer Here's what you do
spacer 1. Cut the pork into thin strips, slice the bok choy into thin strips, peel and cube the mango, mince the garlic and green onions. 2. Whisk chicken stock, soy and cornstarch in a bowl. 3. In a fry pan, heat 1 tbsp of oil to medium and add pork and stir fry for 3-5 minutes and remove. 4. Add more vegetable oil to the fry pan and add bok choy, hot pepper and cook for 1-2 minutes, add garlic and ginger, cook 1 minute and add chicken stock. 5. Add pork and green onions, mango and sesame oil, Cook 1-2 minutes. 6. Serve over rice or noodles.

spacer 1/4 cup chicken stock

2 tbsp soy sauce> 2 tbsp cornstarch

2 tbsp vegetable oil

1 tsp fresh ginger minced

1 tsp sesame oil

1 ripe mango, peeled, pitted and cubed

1 lb ( 500g) boneless pork cut into thin strips

4 cups sliced bok choy( 1 medium head)

1/4 tsp hot pepper flakes( optional)

4 green onions, minced

1 clove of garlic, minced
