spacer Butternut Squash Cake

Creamy. Yummy. Delicious. Healthy. Good alternative for pumpkin. Goes well with tea or coffee.

spacer Here's what you do
spacer Combine oil, sugar and eggs. Beat well, then add squash and mix well. Add dry ingredients and beat until smooth. Add raisins. Bake in a greased 9x5x3 inch loaf pan at 350 degrees for 60 minutes. After it is cooked, let it cool for 30 minutes. When serving, top it with whipped cream or maple syrup or both.

1/2 cup raisins

1/3 cup vegetable oil

1 cup brown sugar

2 eggs

1 tsp. baking powder

1 tsp baking soda

1/4 tsp. salt

1 tsp. cinnamon

1 cup cooked butternut squash
